ALEJANDRO MALES & VERMILLION BLAZE
Along with his father Prospero and his brother Brayan, Alejandro Males began with land that was nothing but empty soil. They harvested their first crops about six years ago, and each year they’ve been cultivating the land in the pursuit of achieving better quality coffees. Their Bourbon Aji is a testament to their work, and this coffee is one that we are immensely excited to be offering.
The coffee is hand picked at peak ripeness, after which it undergoes 48 hours of oxidation before being left to ferment for 36 hours in water. Once the mucilage has been removed, the coffee is then left to dry on polyshade beds.
Tasting the coffee, we get an exceptionally clean profile with a lovely balance of sweetness and florality. We taste strawberry, orange zest, and rose.
