Softcovers are easy to drink and easy to brew. They’ve got a low level of acidity and pair well with milk (but still taste good black). These are excellent everyday coffees.

Hardcovers are rare micro-lot coffees with distinct varietals and astonishing flavor. Because of their seasonality, a hardcover won’t necessarily be around for long, so don’t sleep on your favorites.
