For some, coffee is a living. For Jorge Rojas, it has been a life.
He was born in 1988, and he was only twelve when his father died — twelve when he set down whatever a boy that age sets down and picked up the work of the farm instead, beside his mother, in the green hills where his family's coffee grew. School fell away after the third grade. Everything he came to know after that, the land itself taught him.
But Jorge was never content simply to keep the farm alive. He wanted the cup to sing. That quiet ambition carried him to ASOPEP Planadas, and from the very first day he tended his trees the way the old knowledge and the good earth ask to be tended — patiently, ecologically, without shortcut. Alongside more than three hundred neighboring farms, he earned an organic BIO certification through the association, and so became one of the rare few coaxing truly organic, high-end coffee from the soil.
The Process — Yellow Honey
This is a Geisha, processed as an anerobic yellow honey.
The cherries were hand-picked and floated, gently pulped, then left to rest in sealed buckets for forty-eight hours, quietly transforming in the dark. A light rinse followed — not quite a wash, something softer than that — before the beans were carried out to the marquesina and laid down to dry. There they stayed for eighteen days, still wrapped in a whisper of mucilage, drying slowly and by turns, with pauses folded deliberately into the days.
Nothing here is hurried. That unhurried rhythm settles the water within each bean, and a settled bean roasts true and even.
In the Cup
The yellow honey keeps all that a Geisha promises — the florals, the perfume, the lift — and folds beneath it a deeper, rounder sweetness, like sunlight warming something already lovely.
