It's young — founded in 2019 by miller Nigusse Debela — but it reads like it's been at this far longer. At 1,900–2,100 meters the air is thin and cold, so the cherry ripens slowly and the fermentation refuses to be rushed — thirty-six to forty-eight hours submerged in cold water, in heat-holding ceramic tanks, sometimes tucked under tarps against the chill. Then ten to fourteen days on raised beds, turned by hand.
