Later, he joined Finca El Paraíso, a farm recognized in the specialty coffee industry, where he worked with Diego Samuel Bermúdez, a well-known coffee grower. At this farm, Andrés was in charge of soil studies and process standardization.\u003c\/p\u003e\n\u003cp\u003eHe has since branched out on his own, coming to own two farms in Cauca. His previous experience and expertise in biochemical engineering has ensured that his processing of coffees is done with emasculate attention to detail and high precision control.\u003c\/p\u003e\n\u003cp\u003eThis particular coffee is an exciting one, showcasing Martinez’ skills as a producer. Cherries are hand-picked at peak ripeness, where they are fermented in beer yeast for 48-hours. Thereafter, the seeds are de-pulped and then fermented for a further 24 hours, highlighting this coffee’s floral characters. Indeed, our olfactory cortex - where smells and taste are processed - is close to our amygdala and hippocampus that help process primary emotional experiences and memories respectively. Memory, then, is a powerful medium of experiencing coffee, something that Andres Martinez’ coffee plays with powerfully. \u003c\/p\u003e\n\u003cp\u003eUp front is a very clear and distinct aroma and flavor of Earl Grey tea; it’s undeniable there, and because it stands out so prominently, it not only is easy to identify but it also invokes strong memories of drinking Earl Grey tea on cold, gloomy mornings in Cape Town. For whatever reason, Earl Grey tea seems to me a tea perfect for reading a long book with; it’s complex, and comforting at the same time. In this particular instance I’m reminded of the month it took me to read through Abraham Verghese’s ‘Cutting for Stone’ - a beautiful and powerful novel that I highly recommend. \u003c\/p\u003e\n\u003cp\u003eNot only is this coffee one that triggers memories, it is itself memorable. A relatively rare variety in Colombia, Chiroso is believed to trace its lineage to Ethiopian landraces, carrying with it an almost unexpected elegance—floral, lifted, and quietly complex. Through meticulous washed processing, including extended fermentations of up to 84 hours, Moreno draws out a profile that feels both vivid and composed. The cup unfolds, revealing layers of ripe berries, soft stone fruit, and delicate florals, all carried by a clarity that speaks to careful handling at every stage. \u003c\/p\u003e\n\u003cp\u003e\u003cbr\u003eWhat emerges is not simply a coffee, but a sense of continuity—of knowledge passed down and reshaped in the present. Moreno’s work is still unfolding, her farm modest in scale yet expansive in ambition, with plans to cultivate even more expressive varieties in the years ahead. Her Chiroso captures a moment within that journey: a coffee that is bright, articulate, and quietly expressive, carrying with it the altitude, the family, and the evolving vision of a producer deeply rooted in her craft.\u003c\/p\u003e\n\u003cp\u003e\u003cbr\u003eThis is an incredibly complex coffee; aromatically it’s bursting with florals reminding me of orange blossoms and jasmine. This Caturra came from Yessica Moreno, and it was one of my favorite coffees of 2025. Yessica Moreno is a fabulous producer operating a relatively small farm yielding micro-lots in the true sense of the word. \u003c\/p\u003e\n\u003cp\u003e\u003cbr\u003eI first came across Yessica while working as a barista, and in particular her Chiroso always left an impression. Chiroso is a unique varietal, often described as ‘Colombia’s Gesha’ for its floral and fruity flavor profiles, and Yessica’s was among the first Chirosos that I had ever tried. It continues to set the standard for me when sourcing Chirosos. If you had an opportunity to try Maria Rodriguez Chiroso from Finca Betania that we released last year and enjoyed that, then this one is for you. \u003c\/p\u003e\n\u003cp\u003e\u003cbr\u003eBeyond the coffee, I’m always eager to source coffees from women-led farms. Yessica is, in my opinion, among the best producers in Colombia, continuing to push the boundaries of what is possible for women producers in the country.
